Somebody on the internet told you that leftover rice is better for you than fresh rice, and you have been quietly sceptical ever since. Fair enough. It sounds exactly like the kind of thing the wellness internet invents on a slow week.
This one is real, though. Resistant starch is what forms when cooked rice, potatoes or pasta are cooled, and it genuinely behaves differently in your body. What it is not is a licence to eat unlimited pasta salad, which was my first hopeful conclusion and lasted about a fortnight, until the trousers had an opinion.

What resistant starch actually is
Most starch is broken down in your small intestine into glucose. Resistant starch, as the name suggests, resists that — it passes through largely intact and arrives in the large intestine, where your gut bacteria ferment it.
That fermentation produces short-chain fatty acids, butyrate in particular, which is the preferred fuel for the cells lining your colon. So resistant starch behaves less like a carbohydrate and more like a fibre. Which is a genuinely useful thing for a plate of potatoes to do.
Why cooling changes it
Evidence: Moderate. When starch is cooked, the granules swell and open up. When it cools, some of those chains re-form into a tighter crystalline structure that your digestive enzymes struggle to break apart. The technical word is retrogradation. The practical word is leftovers.
Chilling cooked potato, rice or pasta for at least a few hours measurably raises the resistant starch content. Reheating does not undo it — a chunk of the retrograded starch survives, so warm leftovers still count.
The effect on blood glucose is real but modest. Studies of cooled and reheated starches have generally shown lower glucose responses than the same food eaten freshly cooked, but the difference is a nudge rather than a transformation. Anyone promising you a flat curve from cold rice is selling something.
Cooling your rice is a small, free improvement to a food you were eating anyway. That is the whole claim, and it is enough.
Where to actually get it
Evidence: Strong for these as food sources.
Cooked-then-cooled potatoes, rice and pasta. Potato salad, rice salad, pasta salad, or last night’s dinner reheated tomorrow.
Legumes. Beans, lentils and chickpeas are the best everyday source by a distance, and they arrive with protein and other fibres attached. If you only change one thing, change this one.
Slightly green bananas. Not the sweet freckled ones. The ones you would normally leave in the bowl.
Oats, particularly overnight oats. Rolled oats soaked and chilled rather than boiled to oblivion.
Notice that none of these are a powder. There are resistant starch supplements, and they are fine, but the food sources bring fibre, protein and micronutrients along with them for less money.

Why this matters if you have PCOS
Evidence: Emerging. Two threads are relevant here. The first is glucose: a slightly lower post-meal rise, repeated across many meals, is a reasonable thing to want when insulin resistance is part of the picture.
The second is the microbiome. Resistant starch is a fermentable substrate, and feeding your bacteria more of what they use is one of the few things that reliably shifts microbial diversity — which tends to run lower in women with PCOS. The direct trials in PCOS specifically are small and few. File this under promising rather than proven.
Neither thread beats the basics. Protein, plant variety and sleep still do more, and thirty plants a week is still the fibre rule I would start with.
Go slowly, and cool your rice safely
Expect wind and bloating if you scale up quickly. That is fermentation doing exactly what it is meant to do, but it is unpleasant, and it puts people off within a week. Add one serving, hold it for a fortnight, then add another.
Cooked rice needs handling properly. This is the part the internet skips. Uncooked rice can carry Bacillus cereus spores that survive cooking and multiply at room temperature. Cool rice within an hour, keep it refrigerated, use it within a day, and reheat it until piping hot all the way through. Do not reheat it twice. Your rice does not get three strikes.
Questions people actually ask
Does reheating destroy the resistant starch?
No. Some of the retrograded starch survives reheating, so reheated leftovers still contain more resistant starch than the same food eaten freshly cooked.
How long do I need to cool it for?
Several hours in the fridge is the usual figure in the research — overnight is simplest. A few minutes on the counter does not do it.
Is a resistant starch supplement worth buying?
Only if food sources genuinely are not working for you. Potato starch and green banana flour are cheap and effective, but legumes and cooled grains deliver the same substrate with far more nutrition attached.
